Peanut Butter Kisses (My Favorite Christmas Cookie)

Peanut Butter Kisses are THE BEST cookies! Growing up we had them once a year – at Christmas.  Today, I still only make them at Christmas and I always look forward to it.  We just finished our first batch of the season so I thought I’d share the recipe. Warning: These are addictive.

Peanut Butter Kisses (My Favorite Christmas Cookie)
  • 1 stick softened pastured organic butter
  • ½ cup organic no sugar added peanut butter
  • ½ cup organic coconut sugar
  • ½ cup organic brown sugar
  • 1 tsp vanilla
  • 1 egg
  • 1½ cups organic unbleached all-purpose flour
  • 1 tsp baking soda (aluminum-free)
  • ¼ tsp sea salt
  • 12 Hershey kisses (dark or milk chocolate)

  1. Preheat oven to 375F
  2. Beat butter, peanut butter, sugars and vanilla on medium speed until creamy. Beat in egg until light and fluffy.
  3. Mix in flour, baking soda and salt on low speed until blended.
  4. Form dough balls into 1½ balls and gently flatten with a fork.
  5. Place on ungreased cookie sheet (I use a silpat mat)
  6. Bake 10 – 12 minutes or until light golden brown.
  7. While they’re baking, unwrap 12 Hershey kisses. When the cookies come out of the oven press the Hershey kisses into the center.
  8. Move the cookies to a cooling rack after 2-3 minutes.
  9. Store in an air tight container for up to a week or freeze for Christmas.
