Last weekend, my sister and I spent days in the kitchen coming up with creative new recipes using seasonal produce. Our big focus was apples because I had a 10 lb box of golden delicious just waiting to be turned into something amazing. Of all the recipes we came up with, this one was my absolute favorite…and luckily…also the easiest.
Our apple fondue cups would make a great appetizer for a fall party or a tasty side dish for a weeknight dinner. I ate mine as dessert. The way the creamy rich cheddar cheese and the crunchy walnuts combined with the sweet, baked apple was a definite treat.
Give this recipe a try. You won’t be disappointed!
- 4 Golden Delicious apple (or whatever variety you have on hand)
- 2 cup raw aged cheddar cheese (shredded)
- 1/4 cup chopped walnuts
- black pepper and sea salt
Preheat the oven to 350 F. Wash the apples and cut the tops off then scoop out the core and seeds leaving the bottom in tact so they look like a bowl.
Fill each apple cup with cheese and top with walnuts. Sprinkle with black pepper and a pinch of sea salt.
Use a muffin tin to bake your apples. Place each apple in a muffin cup to help keep them upright and holding their shape as they soften.
Bake for 20-25 minutes or until the cheese is melted and the apples are soft. You should be apple to easily pierce them with a fork.
