Breakfast Idea #2: Eggs and Greens

I’m not really a morning person so I need quick and easy breakfast ideas that give me plenty of energy to navigate the day with our boys.  I like this one because helps me start my day with greens, one of the most important super foods, and I can prepare it in minutes.

Ingredients:

  • 1 organic pasture raised egg
  • 1/2 tablespoon of expeller-pressed coconut oil
  • 1 cup of spinach or kale

Directions: Melt the coconut oil (or olive oil) in a small pan on medium heat.  Crack your egg into the pan and let it cook until the edges start to brown slightly.  Flip the egg so it’s off to one side of the pan and toss in your greens.  The egg and the greens should be finished at about the same time depending on how you like them.  Make sure not to over cook the greens.  They are done when they turn bright green and start to shrivel.  Remove everything from the pan and place on a serving plate.  Sprinkle with sea salt and black pepper and enjoy.

If you have extra time, or the desire, you can toss in some other veggies.  Cut up cherry tomatoes, diced bell peppers, chopped scallions or onions, or even a tablespoon of salsa.  If you don’t like your egg over easy, just scramble it when you crack it in the pan and then mix in your veggies just before the eggs are ready to come out of the pan.
