Super Foods Soup Recipe

I’ve been feeling really run down from the sleepless nights that come with helping Nature Boy recover from croup.  Because we’ve been stuck in the house, I haven’t beensuper foods soup recipe able to grocery shop, but I still wanted to make something healthy and extra nourishing for lunch.  I searched through the pantry and freezer and this is what I came up with. 

Super Food Soup:

  • 1 32 oz box of Pacific Foods organic low-sodium chicken broth
  • 1 can Muir Glen organic fire roasted diced tomatoes
  • 1 can Eden Organics black beans
  • 1/2 a bag of frozen organic spinach
  • 1 extra large garlic clove minced
  • 1/4 cup Ancient Harvest quinoa
  • sea salt
  • black pepper
  • onion powder
  • coconut oil

Mix the chicken broth, coconut oil, diced tomatoes, black beans and garlic in a pan and bring it to a slow boil.  Add in sea salt, black pepper and onion powder to taste.  (If I had fresh onion, I would have used that in place of onion powder.) Next mix in the quinoa and let that simmer until the quinoa is cooked through (you can tell it’s done when it unravels and looks like a small spiral).  Pour in the spinach and turn the heat down letting it cook just long enough to heat the spinach.  Remove from heat and serve hot. 

Nature Boy would’t eat it, but Bam Bam and I took care of the entire pot in one sitting.
